Fresh Spring Roll


Ingredients:

Filling

Shredded Tofu
Shredded Carrots
Shredded cabbage
Thinly sliced green beans
ground pork or chicken
chopped garlic


rice paper spring roll wrapper
curly leaves lettuce
ground peanuts
dried shredded seaweeds
chopped cilantro

sauce:
brown sugar
water
chopped garlic
teeny bit of vinegar
teeny bit of sesame oil
cornstarch

  1. It's my version of fresh spring roll, the filling came from my mother in law, that's how she prepares hers w/c is very tasty and healthy.

    I like using the Vietnamese spring roll wrapper because it just doesn't make the spring roll tastier, I can roll it ahead and it stays fresh for as long as it's covered with plastic wrap. Jerry takes this to work for lunch!
